<span style="color: red;">L'impasto solitamente adoperato per la preparazione di biscotti, crostate e <strong>tartellette</strong> è la pasta frolla, ma, quella ancora più idonea è la pasta sablé; è un impasto simile alla pasta frolla, dalla quale si differenzia per essere più friabile. Il metodo di lavorazione è invece lo stesso...amalgamare in fretta tutti gli ingredienti e, una volta formata la palla, avvolgerla in un po' di pellicola da cucina e riporla in frigo per almeno mezz'ora. Trascorso questo tempo, stendere il panetto in una sfoglia spessa circa 3 millimetri e con essa foderare gli stampini per tartellette, tagliando i bordi in eccesso. Intanto, allestire la crema mescolando i tuorli con lo zucchero fino a formare un composto schiumoso e chiaro; aggiungere la farina, la scorza di limone e versare il latte leggermente intiepidito a filo, prestando attenzione a che non si formino grumi. Mettere sul fuoco ad addensare e, una volta intiepidita, versare la crema nei fondi delle tartellette che saranno state cotte in forno preriscaldato e ventilato a 180° per circa 15 - 20 minuti. Guarnire con frutta a piacere...noi abbiamo scelto fragole, kiwi, banane e frutti di bosco. Sciogliere la gelatina di albicocche sul fuoco e versare sul decoro di<strong>crema e frutta</strong> per lucidare. Conservare le tartellette in frigo fino al momento di servire!</span></div>
